Aloo roast - Potato roast
Cooking time: 10 min. / 12 min.Difficulty: easy
Another from the range of Kerala specials from South India. I have learnt this recipe from a lady, who except all the other delicacies made the best curries in whole South India I had a chance to try!
Process
Heat up oil in thick wok and put in musterd seeds. As soon as they start popping up, add curry leaves. 1 minute later add potatos, onion, ginger and salt. Add little bit of water for potatos to get cooked and cover. In the end of cooking there should be no water left. So add just bit by bit when needed. Cook on small fire and check from time to time if potatoes got soft.
When they get soft, add all remaining ingredients. Stirfry 2 more minutes and serve.
"Potato roast" in India is usually served with rice and other dishes.

Ingredients
For 4 portions:
- 3 large potatos peeled and diced
- 1 red onion fine chopped
- 1 cm fresh ginger crushed
- 3-4 tbs oil
- 1/2 tsp black mustard seeds
- 15 curry leaves
- 1-2 tsp chili powder
- 1/2 tsp turmeric powder
- 1-2 tsp coriander powder
- 1-2 tsp chicken masala powder
- 1 and 1/2 tsp fennel seeds ground
- 1 and 1/2 tsp cinnamon powder
- pinch of salt
Side dish:
- rice
