Kerala paratha - Parotta

Paratha is an Indian flat bread, which varies from region to a region. You can get a plain one or with added potatoes and garlic. Kerala paratha is special firstly thanks to quite high content of fat (ghee) and secondly as the pancake is created from a stripe of the dough wrapped into a spiral. So when you hit it from the sides, it breaks and it is really tasty.
Process
Mix flour with ghee, add salt and sugar. Bit by bit add lukewarm water and process the dough thoroughly until smooth and elastic. Still thick enough.
Set aside, cover with foil and let it rest for 30-60 minutes.
For next steps I would recommend you to play the video below. Separate the dough into double portions. Roll the dough to a very thin and large disc. Halve it. Take the end of one half into your hand, let it hang down and wrap the stripe around your index finger. Put the end of the dough into the middle of the spiral.
Roll the spiral into a final size pancake and fry from both sides till golden brown.
The last thing is to make a heap of all ready and still very warm parathas and crush them few times from the side and break them.
Serve with various Indian dishes like a bread.
