Paneer palak - Cheese with spinach
Cooking time: 10 min. / 20 min.Difficulty: easy
One of my favorite North Indian recipes, which I learned in a small restaurant, including a recipe, how to make a home made paneer. I was surprised how simple it is :)
Process
Cook spinach leaves in salt boiling water 5 minutes. Water should reach about 1/3 of spinach leaves volume. Drain and blend in a blender.
Heat oil in a pan on a high heat, add cumin seeds, onion and garlic and stir fry 1 minute. Then add fenugreek leaves and shortly after add tomato and ginger. In one more minute add turmeric, chili powder, coriander powder and cumin powder. After one more minute add spinach with paneer. Warm it up and salt to taste.
You can tender it by cream, if you want.
Serve with rice or chapati.

Ingredients
For 4 portions:
- 750g fresh spinach leaves
- 400g paneer cheese, cut on cubes
- 1 large tomato finely chopped
- 1 large red onion finely chopped
- 3 cloves garlic crushed
- 1 tsp cumin seeds
- 1 cm fresh ginger crushed
- 1/2 tsp chili powder
- 1/2 tsp turmeric powder
- 1-2 tsp coriander powder
- 1 tsp cumin powder
- few fenugreek leaves (optional)
- pinch of salt
- 2 tbs coconut or vegetable oil
- 1-2 dcl cream (optional)
Side dish:
- rice or chapati
