Sambal goreng tempe - Fried tempeh with sweet sauce

Sweet variant of fried tempeh. Great and simple Indonesian recipe, which I have learnt on Lombok island from Mario, cool guy from Jawa.
Process
Dice tempeh. The smaller pieces, the more crunchy tempeh will be. Fry in a wok on 3-4 tbs oil till golden brown. Take out from a wok and put aside.
Heat up oil again, fry whole garlic and shallots 2 minutes. Take out of the oil and crush into a paste in a mortar or in a blender.
Heat up oil again, cca 2 tbs, add garlic shallots paste and fry 2 minutes. Add salt, sugar and tamarind paste mixed with a bith of water and simmer on a small heat 2 minutes. Add fried tempeh and kecap manis sauce, mix well and heat through.
Serve with rice.

Ingredients
For 4 portions:
- 250 g tempeh
- 3 cloves garlic
- 2 shallots
- 2 tbs kecap manis sauce or dark soya sauce
- 2 tsp brown or palm sugar
- 1 tamarind husk mixed with water (or 1 tsp tamarind paste)
- salt
- oil
If you love it hot, add:
- 2 red chilies
- 2 cm piece galangal
For non-vegetarian variant you can add too:
- 1 tsp prawn paste
- bit of chicken broth powder

- Indonesian mortar cobek
