Wambatu curry - Eggplant curry

In Sri Lanka they make curry from nearly any kind of vegetable you can imagine. Eggplant is not en exception. And as usual is very easy, fast and tasty, convenient for both vegetarians and vegans too.
Process
Cut stalk and off eggplant and cut on French fries shaped pieces. Mix with all ingredients. Pour in some water, that the total volume of liquid is reaching max. 2/3 of vegetable and spices volume and cook on a small fire 20 minutes covered.
Serve with rice and other Sri Lankan curries.

Ingredients
For 4 portions:
- 8 small "Sri Lankan" eggplants or 1 large "European"
- 1 red onion, cut on strips
- 3 green chili peppers chopped
- 2 tomatoes chopped
- pinch of salt
- 1/2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp chili powder
- 8 curry leaves
- 1 pandan leaf torn on 3 cm pieces (optional)
- home made coconut milk from 1/2 coconut or 150 ml can
