Snails cooked in ginger, lemongrass and chili

Once in a fisherman village, Nam `O in Vietnam, I was offered a seat by a table with a plastic bag full of snails, got a few thorns to get them out of their shells ..... and like this I was introduced to one of the most frequent seafood street food in Vietnam. It doesn't have to be seafood actually as you can use fresh water snails too.

Vietnamese coffee
Cooking time: 1 min. / 5 min.Difficulty: easyvideo
I am not a heavy coffee drinker. Or better say I had not been, until I came to Vietnam and became nearly addicted to it. No matter if hot or ice coffee, with sugar or condensed milk. The black coffee itself has its specific flavour thanks to the way it is roasted. The coffee beans in Vietnam are roasted on oil with a bit of sugar, cocoa and vanilla. These ingredients give significant taste to the drink together with slow dripping through a simple filter.

We were riding motorbike on the beach, got a fresh squid from fishermen, just from the boat, asked one nice lady by the road to make it for us. And she made such an amazing and refreshing salad. Perfect food for summer heats.
Nuoc Cham - Basic Vietnamese dipping sauce
Cooking time: 3 min. / 0 min.Difficulty: easy
Vietnamese cuisine is based on emphasizing the real taste of prepared dish. Meaning they do not add many ingredients into when cooking it. The taste is gained from side sauces, where you dip each bite just before putting into your mounh (both meat and fresh vegetables). Nuoc Cham is the sauce you will find nearly everywhere in Vietnam. It is a combination of sweet, sour, salty and spicy flavour. If you are not a big fan of fish sauce or you try it for the first time, be careful about using it as its taste is quite special.

After about five days spent with Vietnamese family, who served huge heaps of pork with each meal, this vegetarian dish was a very welcome change.
