Galangal - Siamese ginger
Galangal belongs to a ginger family. Its rhisomes are used widely in SouthEast Asia, especially in Thai cuisine. It looks very similar to ginger, the colour is usually lighter, skin thinner and more transparent.
Galangal is woodier than ginger. So when you want to crush it, slice it first. Regarding taste, there are more kinds of galangal and sometimes the taste is quite different from ginger (it is something like pine, peppery, citrusy flavour). So do not substitute galangal with ginger unless you know the taste.
