- Papaya
Papaya is a tropical fruit used in majority of cuisines in tropical area. The mature one (orange inside) is used for juices, jellies, sweets ..... The one white/green inside (unripe) is used into salads, curries and is pickled too.
- Achcharu - Green papaya pickle
When I was in Sri Lanka for the first time, I was living in the house with Sri Lankan aunties and a granny too. When I came back in one year, the granny unfortunately was not there any more..... At the time it was just 3 months she passed away, so I witnessed preparation for Almsgiving ceremony, Sanghika dana. The ceremony should bring a beautiful post-mortem life of the person. Loads of special food are prepared for the ceremony and one of them is achcharu, green papaya or carrot pickle.
- Bun cha gio - Vermicelli with fried spring rolls
If you made too many spring rolls, you can eat part of them with vermicelli and you get Bun cha gio. Really simple dish. You just cut spring rolls on noodles, add some vegetables, traditional Vietnamese sauce and here we go. I have got some pork on the picture too, but it was a bonus ;)
- Green papaya salad
When I was a kid, my mum was always telling me not to eat unripe fruit, that I will be sick. In Vietnam and other Asian countries, their opinion is completely different. Unripe fruit is used as vegetable. Like in case of unripe, green papaya, which is used into various kinds of salads. This recipe is the most frequent and simple one.
- Rujak - Fruit and vegetable salad with sweet sauce
I love this salad. The one on the picture is made of green mango. But you can use many kinds of other fruit or vegetable and mix all together. The most important is the sauce anyways :) Very common mix in Indonesia is pineapple, watermelon, papaya, daikon, cucumber ..... so no worries and lets experiment ;)
- Som Tum - Green papaya salad
This Thai salad is a perfection itself. Firstly it was prepared by a really nice couple by the road, who were passing by with their mobile kitchen on a sidecar. You just wave on them, they stop and prepare straight in front of you what you choose from their offer. The combination of flavours of lime, palm sugar, peanuts, shrimps, chilies ..... do I really need to add more?
