- Tamarind
Tamarind is a huge tropical tree. Pulp from its husks has a specific sour taste and it is a base of well known worcester sauce. It is used for medical purposes too.
- Goraka - Indian tamarind
Goraka is a fruit commonly used in Indian and Sri Lankan cuisine. It gives a sour flavour to the dish. It works as a meat tenderiser used mainly in meat and fish curries.
- Fish satay - Saté ikan laut
One of my favourite specials of Bali in Indonesia. Satay made of various kinds of minced fish and shrimps with coconut and a pleasant combination of spices. Usually grilled by the road on bamboo skewers, sometimes on lemon grass stalks, which give to satays amazing aroma.
- Meen curry - Fish curry Kerala style
I really enjoyed this fish curry. Yes, it was quite spicy, but the taste was balanced nicely with the coconut sauce. I had this great dish with an amazing muslim family. We were eating on roof of their house in Kerala in south of India. Super nice picnic ;)
- Rujak - Fruit and vegetable salad with sweet sauce
I love this salad. The one on the picture is made of green mango. But you can use many kinds of other fruit or vegetable and mix all together. The most important is the sauce anyways :) Very common mix in Indonesia is pineapple, watermelon, papaya, daikon, cucumber ..... so no worries and lets experiment ;)
- Sambal goreng tempe - Fried tempeh with sweet sauce
Sweet variant of fried tempeh. Great and simple Indonesian recipe, which I have learnt on Lombok island from Mario, cool guy from Jawa.
- Sate ayam - Chicken satay with peanut sauce
This is Indonesian classic. This is literally a meal, that you do not have to go for, it simply "comes" to you itself :) In other words, it is a very common meal sold from "meals on wheels" restaurants. On motorbikes (yes, ardent charcoal included) or manually driven.
- Spicy and sour fish curry
If you love spicy food, you will love this Sinhala fish curry recipe. Check the list of ingredients and you will understand ;). But still could be worse. Better have some sugar or yoghurt with you to extinguish your tongue.
- Tempeh tofu veggie curry - Santan sayur tempe
This amazing Indonesian curry I learned in a street restaurant on Lombok island. Except for the very interesting cooking as usual, may be more interesting was watching the couple which owned the restaurant with a little shop. The woman managed to cook a few delicious dishes, get, carry and store all good from several suppliers and her husband was hanging around coloring his hair.....
